There is nothing better than turkey hash. Just cube turkey (good way to use the little bits), stuffing, mashed potatoes, add gravy and fry in a skillet. No need for other stuff. I fry mine in butter and flip the patties to brown both sides. Serve with leftover cranberries, yum.

My mom and I made this using our Thanksgiving leftovers, and it was DELICIOUS! However, we replaced the parsnips with charlotte potatoes to great effect, and would highly recommend doing such as an alternative to anyone who wishes to try.

Used potatoes instead of turnips and chicken sausage for the bacon. Pretty good with leftover roast chicken.

Everyone really liked this! I wouldn't use so much butter next time, don't think it was necessary. It didn't seem to make that much - I would double for next time. Agree that poached eggs were a great way to go.

Used up some leftover roasted potatoes and leftover chicken breast. Very satisfying meal and will be excellent leftover leftovers for breakfast-- !

One of my favorite dishes to cook when in the mood for a hash. If you don't have leftover turkey, use ground turkey and fry it with the butter for a couple minutes before adding the bacon.

I made a half recipe. It was fabulous except that next time I will crisp the bacon a bit more before adding other ingredients. Great depth of flavor!

Delicious, of course, with all the fat. Next time I would sauté the bacon enough to render some of the fat, pour that off and then proceed, perhaps with less butter too.

No need for broth, separate skillets, or parboiling. Do up onions and potatoes in a little butter - don't turn them for a few minutes - add bacon, sprouts, and turkey, in that order. If your cast iron skillet is big enough, everything can be cooked in one shot. You can swap out cilantro for parsley and Tabasco instead of jalapeños.Four tablespoons of butter and a quarter-pound of bacon is overkill, at least for my genetically compromised arteries.

Sooo delicious, have made twice now and will be a Thanksgiving leftover tradition! Think I will try with leeks next time. Broth takes a long time to absorb, at the 20 minute mark eventually had to raise heat to 425 and then finish in the broiler.

I was out of turkey so I used bacon and sausage, and added some paprika, topped with kewpie mayo! It was divine

I can only add to the chorus to dish the parsnips and use up the left over potatoes. Or if they are still rawparboil them in rich turkey or chicken broth before adding broth and all to the hash. A sprinkling of Aleppo pepper and a shot or two of Worcester Sauce gives a humble, earthy fare some needed character.

I love cabbage, and this recipe goes great with 1/2 a head of it. I dump it into the pot with the parsnips and onions to cook it just before everything goes in the oven. Becomes more of a stew than a hash with the extra veggie moisture, but pure comfort food. Don’t be afraid to pair it with sausage to complete the dream breakfast!

Added some butternut squash to the parsnips (double veggies next time) and used shredded kale for the topping. No bacon, less butter. Very good!

Incredibly delicious...makes we want to buy a turkey more than 2x per year. Will make again. With or without egg, it's quite satisfying.

Really delicious. I followed the instructions but did have to keep the pan in the oven for an extra 10 minutes. I enjoyed this more than our actual Thanksgiving dinner! The runny egg on top really makes the dish.

Ate this recipe alive! Subbed cubed turkey for ground chicken, Brussels for broccoli, and used turkey bacon and oil instead of butter. Parsnips were PERFECTION, don’t skip. Perfect recipe for anything you have on hand.
