So that’s why I,Ashley reimagined this classic combo into this co*cktail recipe with sparkling wine and sweet strawberry rose sorbet that makes for one tantalizing tipple.

This is basically a fancy ice cream float. But instead of ice cream, you’ve got homemade strawberry sorbet. And the soda is swapped out for sparkling spirits!

Sorbet in a co*cktail? Yes, way sorbet! Mixed with bubbly champagne and some vodka for a bit of a kick, this Strawberry and Rose Sorbet co*cktail will be the perfect nightcap and sweet ending to your next date night.

Ingredients Needed

For the sorbet:

  • Granulated sugar
  • Water
  • Dried organic rose petals— If you have extra, there are lots of other funedible flower recipes.
  • Frozen strawberries — Once you’ve mastered this recipe, try experimenting with different fruits like raspberry or blackberry.
  • Lemon juice

How to Make Strawberry Rose Sorbet

Sorbet is perfect for champagne floats since it takes the place of the sweetness and acidity often found in co*cktails. Sorbet is surprisingly easy to make at home.

Some recipes call for an ice cream maker. But the version we whipped up only requires a blender or food processor to achieve creamy sweet sorbet.

We’ve made a cilantro and mango coconut sorbet and even a watermelon vodka sorbet. This particular sorbet that we created tastes like an icy strawberry lemonade with floral rose notes so you will definitely get the sweetness and acidity.

Instructions:

1 — In a saucepan, combine sugar and water, and bring to a boil. Remove from heat, and add the dried rose petals.

2 — Let it cool. Then, strain out the rose petals through a fine mesh strainer. You have now made a rose syrup that is similar to simple syrup.

3 — In a blender, combine frozen strawberries, lemon juice, and the infused rose syrup. Blend until smooth.

4 — Transfer the sorbet mixture into an airtight container. Freeze until firm, stirring the mixture occasionally.

Homemade Sorbet Recipes and Notes:

  • Store for up to 3 months in the freezer.
  • Adjust the sugar quantity in the sorbet according to your sweetness preference.
  • Speaking of sweetness, when you mix up the sorbet, it should taste almost too sweet before freezing. This is what you want to aim for. Trust us! Our tastebuds can not taste sweetness as well at colder temperatures so more sugar is needed to be added to frozen treats then non-frozen to taste great.

Assembling the Champagne Float

1 — Scoop the strawberry rose sorbet into a chilled glass.

2 — Pour the champagne (or sparkling wine) and vodka (or gin) over the sorbet.

3 — Garnish withrose petals and astrawberry slice. (We cut oursinto a heart.)

4 — Let the sorbet melt a bit before drinking to let the flavors meld. It may turn out looking like pink champagne.

For the sorbet:

  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup dried organic rose petals
  • 4 cup frozen strawberries
  • 1/4 cup lemon juice

For the co*cktail:

  • 1/2 cup strawberry rose sorbet (1 scoop)
  • 5 oz champagne or dry sparkling wine
  • 5 oz vodka or gin
  • 1 strawberry slice optional for garnish
  • Rose petals optional for garnish

  • Top with rose petals and strawberry slice (I cut mine into a heart.)
