This delicious recipe for parmesan-crusted cod with thyme is a great option for a busy weeknight as it is ready in less than 30 min!

Not only it’s a healthy meal but the crunchy texture of the parmesan and thyme topping make makes the basic, neutral-tasting cod fish ultra tasty so that the whole family with love it!

This is one of the easiest ways to prepare fresh cod fillets and you only need couple of simple ingredients.

  • Cod fillets:Choose fresh cod fillets with firm, white flesh for this simple dish. Frozen and thawed cod fillets can be used, but I recommend fresh fish for the best results. You can also make this recipe with other types of mild white fish.
  • Panko bread crumbs:Panko bread crumbs provide a light and crispy texture to the crust. You can use plain panko or seasoned panko for extra flavor. You can also use regular breadcrumbs.
  • Parmesan cheese:Use freshly grated cheese for the best flavor and texture.
  • Garlic: I like to use garlic cloves, but you can also use garlic powder.
  • Olive oil:Use extra-virgin olive oil if possible, but other vegetable oils work too. I add it directly to the breadcrumbs to crisp up the crust. You can also use avocado oil or any other vegetable oil.
  • Lemon:I use the lemon zest for the crust and decoration and then cut the lemon into wedges to serve alongside.
  • Thyme:Fresh thyme goes wonderfully with Parmesan and lemon! You can use dried thyme, the flavor will be a little more pronounced, so reduce the quantity.For a milder flavor, use fresh parsley.

Parmesan Crusted Cod: step by step

  1. Prepare the fish. Preheat the oven at 350 °F (180 °C). Line a sheet pan with parchment paper. Pat dry the cod filets with paper towels—season with salt on both sides. Place the fish filets on the prepared baking sheet or a baking dish greased with a bit of olive oil.
  2. Prepare the coating. Mix panko crumbs, Parmesan cheese, lemon zest, fresh thyme, garlic, and black pepper in a small bowl. Add olive oil.
  3. Coat the fish. Place the panko mixture on top of the fish. It doesn’t matter if it falls off.
  4. Bake the fish. Bake for 12-15 minutes at 350 °F (180 °C) until the crust is golden brown.

  1. Even coating:Coat the fish fillets evenly with the breadcrumbs to achieve a uniform and crispy crust.
  2. Don’t overcrowd the fillets:Give the cod fillets space on the baking sheet. Overcrowding can trap steam and lead to a soggy crust.
  3. Adjust cooking time:Cooking times can vary based on the thickness of the fillets. If your fillets are thicker, you may need to extend the baking time slightly to ensure they are cooked through.

  • 4 cod fillets ( 6-7 oz (150-200 g) per fillet)
  • 1 cup Panko bread crumbs (75 g)
  • 1/3 cup Parmesan cheese (50 g)
  • 2 garlic cloves or garlic powder
  • 2 tbsp Fresh thyme or 2 tsp dried thyme
  • 1 Lemon , organic for the zest
  • 3 tbsp Olive oil
  • Salt
  • Black pepper

Decoration

  • Fresh thyme
  • Fresh lemon wedges

Instructions
