It’s time to make Dutch boerenkool! But let us tell you first what boerenkool is! Boerenkool is what we Dutchies like to call ‘stamppot’. And a stamppot is a very traditional Dutch winter dish that you make with a combination of mashed potatoes and vegetables. And in this recipe, we will tell you all about the delicious mashed potatoes with kale dish.

We love kale and are always happy when we see it in the store again. Even when traveling, we sometimes made mashed potatoes with kale, and everyone always loved it. It’s perfect comfort food! And it’s super healthy too.

Many Dutchies love to eat this dish with a smoked sausage and bacon. But we are vegetarian, so make it a vegetarian recipe. And lucky for us there are many vegetarian and even vegan options for sausages and bacon (especially in the Netherlands!). And we love to add tasty mushrooms, onion, and gravy. But of course, you can choose from these options, whatever you like best.

This boerenkool recipe can also be made vegan easily.

Mashed Potatoes With Kale

How do you make boerenkool? Fortunately, making mashed potatoes with kale is not difficult! I never actually made this dish because I thought it was a lot of work. Fortunately, it doesn’t take too long at all. Within 45 minutes you have a delicious vegetarian kale dish on the table.

What do you need to make mashed potatoes with kale? 1.32 lbs / 600 grams of potatoes (about 6 potatoes, depending on the size of the potatoes), 0.66 lbs / 300 grams of chopped kale, 1.4 tbsp / 20 grams of (vegan) butter, 1 vegetable stock cube, pepper, and salt.

Serve the mashed potatoes with kale with fried onions, bacon, mushrooms, smoked sausage, mustard, piccalilli, pickles, and gravy. Choose what you like to eat with it and use a vegan/vegetarian replacement if you eat no meat (like us).

Potato And Kale

The ratio of potatoes to kale is important. We often throw in an extra potato, because we don’t like it when it’s ‘too green’. But this is totally up to you!

Original recipes use 1.1 lbs / 500 grams of potatoes per 0.66 / 300 grams of kale. Some people who like healthy food even use the ratio 1: 1 (300 grams potato, 300g kale)!

The ratio of kale and potatoes is, therefore, a bit of trying to your own taste. We always use at least 1.32 lbs / 600 grams of potatoes ourselves.

Make sure to use floury potatoes for this kale recipe.

Boiling Kale

How long should kale boil? In a large pan, we are going to boil the kale, with vegetable stock and water. The addition of a stock cube makes the kale dish more flavorful!

After 10 minutes, the peeled potatoes can be added to the kale. Then boil the kale and potatoes for at least another 20 minutes.

Boerenkool

After the kale and potatoes have boiled for at least 20 minutes, they can be drained. Make sure to collect the cooking liquid!

Put the kale and potatoes back in the pan and add the butter or (plant) margarine (diced). Also add salt and pepper, to taste.

Then it’s time to mash! Mash everything creamy. Is it still too dry? Add some cooking water.

Serve the boerenkool with onion, bacon, mushrooms, smoked sausage, mustard, piccalilli, pickle, and/or gravy! Of course, make sure everything is vegetarian/vegan. And fortunately, that is possible nowadays in most countries!

Vegan Kale Recipe

This vegetarian mashed potatoes with kale recipe is a vegan recipe if you use vegan butter. Also, make sure the sausage, bacon, gravy, and mustard are vegan!

Leftovers? Save It For Later!

Do you want to keep your leftovers? Definitely do so! This mashed potato with kale recipe is delicious the next day for lunch, for example. Let the dish cool well and then put it in a closed container in the fridge. It can be stored for 2-3 days.

Freezing the boerenkool is also possible! Delicious if, for example, you want to eat it sometime in the spring. You can freeze the mashed potatoes and kale for a maximum of 3 months. Put it in freezer bags or tightly sealable containers.

You can reheat the mashed potatoes and kale in the oven, microwave or pan. We like it to heat it up in the pan with a knob of butter. A delicious crunchy crust will appear. Recommended: also sprinkle some grated cheese on it!

It's getting winter, so it's time to make Dutch boerenkool: a dish of mashed potatoes with kale. We Dutchies love to eat this traditional Dutch dish.

Ingredients

  • 1.33 lbs of potatoes (about 6 potatoes)* (600 grams)
  • 0.66 lbs of chopped kale (300 grams)
  • 1.4 tbsp of (vegan) butter (20 grams)
  • 1 vegetable stock cube**
  • Pepper and salt
  • 2 unions (optional)
  • Vegetarian / vegan bacon or mushrooms (optioneel)
  • Vegetarian / vegan smoked sausage (optional)
  • (vegan) mustard / piccalilli / pickles (to serve)
  • homemade (vegan) gravy (optional)

Instructions

  1. Boil the kale, with vegetable stock and water, in a large pan.
  2. Peel the potatoes and add to the kale after 10 minutes. Boil the kale and potatoes together for at least another 20 minutes.
  3. Prepare the smoked sausage according to the packaging. Make gravy now if you like to eat the dish with gravy.
  4. Chop and fry the onions in a frying pan, possibly with bacon or mushrooms.
  5. Drain the kale and potatoes and collect the cooking water.
  6. Return the kale and potatoes to the pan and add the butter/margarine (cubed). Also add salt and pepper, to taste.
  7. Mash everything creamy. Is it still too dry? Add some cooking water.
  8. We like to scoop the onion mixture through the mashed potatoes with kale, but you can also serve it as a side dish.
  9. Serve the dish with gravy, sausage, mustard/piccalilli/pickles and enjoy!
