Boy, do we have a recipe for you today. Club soda waffles. Ever heard of them? I hadn’t, until Rachel told me about them this week.

Rachel works in a school for children with special needs, and apparently they were cooking last week with the kids. Not all the kids can have dairy, so one of the teachers brought in this club soda waffle recipe. No milk needed! The waffles were so good that Rachel picked up the ingredients that afternoon so we could make them for our weekend breakfast. We had them Saturday and Sunday, and even Baby Boy enjoyed noshing on these (with his two little front teeth!).

These pictures can’t convey the awesome taste and texture. The club soda makes the waffles crispy and airy – when you bite into the waffle you can see all the little air pockets. They almost remind me of zeppoles– and who wouldn’t love zeppolesfor breakfast? We even sprinkled a little powdered sugar on some, though they were delicious even just plain.

We did try to lighten the recipe up the second day by substituting apple sauce for the vegetable oil. While the waffles still tasted good, they lost that “airiness” (I can’t think of a better adjective, my brain has shut down this late at night, sorry!)

We plan on experimenting with less oil, or an applesauce/oil combo, but wanted to share with you the original recipe as we got it. If you have better luck at lightening the recipe up, without sacrificing what makes these waffles so special, please let us know. Until then, you can certainly enjoy these once in awhile, right? 🙂

We are just a few days away from Baby Boy’s First Birthday. Unbelievable how fast the time has gone. I was looking at photos from his first few weeks of life, and I can’t get over how much he has grown and changed. Where before he relied on us for absolutely everything, only capable of lifting his head or batting his arms, now he can do so much.

He walks, he feeds himself and has favorite foods, and now most recently, he’s pointing at things. Not just random pointing, but things that are of interest to him like books or toys, or at birds outside, cars, and especially dogs. Oh, how he loves dogs! He exclaims excitedly “Dah!” when he sees a dog on our walks. And that “Dah” is not to be confused with the special variation only I get when he sees me. It absolutely makes my heart melt every time I come home from work and see him.

Ok. Enough gushing. As I said in last week’s post, I’m feeling a bit mushy lately, reflecting on being a parent of an (almost) 1 year old. It’s just awesome, and I can’t not share that enough in these typed thoughts. 🙂

Ingredients

  • 2 cups Bisquick
  • 1 egg
  • 1/3 cup vegetable oil
  • 11/3 cups club soda

Instructions

  1. Combine all ingredients in a medium mixing bowl and whisk to incorporate. Do not over mix!
  2. Pour about 1/2 cup (measurement may vary) into hot waffle maker. Cook to desired level of crispiness.
  3. Note: Because of the club soda, the batter doesn't keep long so if you have left over just make the waffles and freeze them (if you don't eat them all!)

    You just keep gushing over that little boy; it’s awesome 🙂 I am not normally a mix person, but right now I’m up for easy peasy and this looks like it fits the bill nicely, plus doesn’t have milk so yayayayayay!! Still trying to figure out what my 10yo has and why so many things irritate his stomach 🙁 Milk-free helps. Pls thank Rachel for the recipe!

    Excellent waffle recipe and I have tried them all from scratch to the overnight yeast ones. This is just simply good, light and airy with a crispy outside.
